My hot take on the subject;
I liked it. Was it the best show I ever watched? No. My top 10 or even 25? No. But it was fine I feel for what it was. I think people went in with either preconceived notions or far higher expectations than they should have had. It isn't the witcher nor ever was going to be. It's a, mostly, disconnected story that takes place 1,200 years before Geralt used to plant some seeds for season 3 and flesh out where the witchers came from and how the conjunction happened. That's it. Maybe I am more forgiving because I am not a slave to the source material and understood there wasn't going to be much depth in a stand alone 4 hr miniseries.
Again, did it have some flaws? Certainly. But I don't feel it is as bad as many are making it out to be. This reminds me of the cyberpunk 2077 hate bandwagon every jumped on to be with the cool kids, clicks. And in ~6-12 months the predicable and inevitable videos and articles of how they jumped the gun of how harshly they judged it. Let's give it another chance, it's not great but not as bad as people said on release, etc.
